Special Wine Dinner


 

Acclaimed Chef Adam Navadi prepares the menus for special wine dinners featured each month during the summer. The public is invited to sign up for an evening of gourmet food, wine, and a lovely atmosphere at the luxury resort in Huntington Beach, California.

 

What would it cost you to fly from Huntington Beach to Napa, then pay for a meal with the Valley's Stags Leap wines? With hotel rooms, airfare, the meal, and the extras, you're looking at $300 - 500. Don' worry about spending all that money. For $90, you can savor the flavors of Napa at The Californian in its 2008 Wine Dinner Series.


The first dinner features a Perfect Pairing with Stags Leap Cellars and a four-course evening. Stags Leap Napa Valley 2004 Sauvignon Blanc and Laughing Bird Thai-Shrimp Spring Roll with Thai Peanut Vinaigrette with micro celery and brown butter powder is the beginning of an intoxicating meal perfectly paired with a premier wine. Described as an exploration of the many  degrees of acidity and variety of flavors in a crisp wine enhanced by the first course, dining guests find the introduction nothing short of memorable.

Adam Navidi excels in California cuisine and in short order garnered for the Hyatt restaurant a AAA Four-Diamond award shortly after the resort property opened in Southern California in 2002. Navidi's menus and meals have improved with age, much like the fine wines served in the special wine dinners that are back for another year, thanks to previous success and rave reviews.

 

Creating a canvas that ties ingredients of the second course with the 2004 Stags’ Leap Napa Valley, Acacia, Chardonnay, expect richness in the Le Ritz Crusted Wild Copper River Salmon with plump whole wheat couscous and black olive emulsion, tied in with fresh herbs and paired.

In the elegant, yet comfortable dining room with warm colors, a crackling fire and unique crafted lighting that sets a soothing glow, neatly dressed food servers deliver Lambs Spring Herb Crusted Rack with adjoining Sous-vide Loin of Oregon Lamb. Glasses filled with 2002 Stags Leap Napa Valley "Fay” Cabernet, guests begin to discover why Navadi is recognized for his talents and abilities to pair wines with just the right foods.

 

A Deconstructed Early Girl Peach Cobbler, shared with Chateau Ste Michelle, “Ethos” Late Harvest White Riesling, Columbia Valley 2006, is not overstated. Bringing the meal to full bloom with its sweet nectar, the final course is a show stopper. A memorable dessert brings smiles, and accolades that assure that diners will be back to see what else Navidi has in store for this exciting season of wine & food.
