Grilled Salmon on a bed of Couscous, topped with Spinach and drizzled in Mango and Lime Sauces.
My second trip to Parkerr's Lighthouse was as good (even
better) than the first. The vegetable wrap was pretty good first
time around but when I sampled the Chinese Chicken Sandwich my guest had,
I was caught up in the flavor of the mesquite grilled chicken. I knew
I would try some meat or fish upon return.

So the second time I went for a daily special with grilled
salmon drizzled in a mango and lime sauce. Fish cuts come in 6 or 8 oz.
with an endless supply of sourdough bread and butter delivered to your
table. House salads are extra. They include a clean, fresh and crisp
gourmet mix of lettuce and just made-dressings.
Parker's Lighthouse is big on food presentation.
Large colorful plates on which dishes are served as works
of art are visible throughout well lit, open rooms. Huge
glass windows show off expansive views of the Long Beach bay, Aquarium
of the Pacific, city skyline and Queen Mary Ship. The environment
is perfect for viewing what others eat so when you spot desserts, you can't
help but be tempted by the Banana Fosters Sundae with warm rum caramel
sauce and pecan brittle or the Warm Tuscan Apple Tart, dripping with Mascarpone
Cream Sauce. |

Entrees begin around $10. Be prepared to spend around $20
to $40 per
person. The
atmosphere is very casual, the views are outstanding.
