The Modesto (California) dairy farm only uses cows from its own farm herd and takes incredible care in handling of its animals, their healthy growth and the final product. You soon understand why this cheese platter is the cream of the crop of select cheese offerings. Cheese Henge is shaped like Stone Henge and carries the select Fiscalini Farms cheeses. This long time dairy family's roots are in Switzerland, and their products offer the quality Europeans have known for centuries.

That's just the start of incredible dining and one of the countless reasons The Californian is justified in representing the California name in its cuisine. From our favorite, a Grilled Wild Pacific King Salmon Chopped Cobb Style Salad with Santa Barbara Smoked Salmon Bacon and Sparkling Wine-Dill Vinaigrette to a Pan Broiled Breast of California Squab with Pickled Green Apple Ravioli with Point Reyes Blue Cheese Golden Raisin and Pecan-Foie Gras Vinaigrette, Chef Navidi clearly has his act together in selecting and combining flavorful, unique ingredients that are truly gourmet in their interplay. Beautiful ahi platters look like works of art, and the Pan Seared Chilean Seabass Lobster Mashed Potatoes, Caramelized Shallots and Red Wine Reduction rivals the delicious Chilean Seabass preparation we've enjoyed at the Sonoma Wine Country Hilton in Santa Rosa.

Navidi has a flair for the pair! Pairing champagne and caviar, Chef Navidi pairs Veuve Clicquot  (Rose) and Estate Osetra Caviar. He also serves a Santa Barbara Smoked Salmon & Avocado Tartar appetizer. A White Alba Truffle that Chef Navidi shaves on top of risotto and pan seared Chilian Sea bass retails at $2K/pound.
