Carvers Steak & Chops in Roseville, part
of the San Diego based Paragon Steakhouse Restaurants, Inc.,
chain, features an
abbreviated luncheon menu and extensive dinner menu with traditional meat
dishes that include fine prime rib, Porterhouse, Filet Mignon, BBQ Baby
Back, chicken, shrimp, pork chops, lamb chops and veal dinners.
As you enter the restaurant and smell grilled steak, you'll notice the warm
ambience of a richly-decorated place that seats guests fairly close to
accommodate large crowds that fill the popular dining establishment
regularly. Some call it a chain restaurant, which it is, but the look and
feel borders on a fine dining experience. Even so, you'll see jeans and
tennis shoes worn with nice tops, shirts or jackets. Upscale
casual attire seems to fit quite well with the comfortable surroundings.
The dining areas are decorated in what some consider masculine themes.
Earthen tones and cherry-colored wood accents are utilized in chairs, on
wall panels and in a huge wall divider that functionally serves as a
compartmentalized wine rack. It's no wonder that Wine Spectator recognized
Roseville's Carvers Steak & Chops restaurant for its extensive wine selection! Table tops are a polished granite
that contrasts with white linen napkins and white plates.
As you peruse the menu and are offered a warm loaf of sliced sourdough bread
with butter, you can select one of the wines or order a cocktail from the
full bar service. Food servers are dressed in white shirts and ties and are
amiable, attentive and knowledgeable about the menu. They stay on top of
your drinks, keeping water glasses filled and checking with you regularly
to make sure that you are being served as needed.
In a party of 10 people, we tried nearly every item on the menu. Not a
single person was disappointed in their selection, be it lamb or steak.
Clearly the favorite, however, was the house specialty, Prime Rib. Billed as
the finest Midwestern beef, the meat is hand-trimmed and seared in an herb
crust, then slowly roasted for hours. A Standard Cut comes in a 10
ounce serving for less than $25. Carvers Cut, one and a quarter pounds in
size, is served on the bone for under $30. (Note: These prices, menu items

Every steak or chop entrée comes with Fresh Baked Bread and your choice of
Soup of the Day, Spinach Salad with apples, glazed almonds and cranberries,
Romaine Salad with Bleu cheese, bacon, roasted onions and peppers in a
balsamic vinaigrette or a Caesar Salad and your choice of Au Gratin
Potatoes, Baked Potato, Garlic Roasted Mashed Potatoes, Wild Rice Pilaf or
Vegetable.
The flexible menu allows guests to add on
entrees such as shrimp with a BBQ Rib platter. In addition to the beef,
chicken, pork and lamb, fish selections include salmon, shrimp, lobster,
crab legs and catch of the day. Sauces and herbs served
with your dish are superb but you can also order accompaniments such as grilled onions, sherried mushrooms with a hint of garlic, whiskey peppercorn, Béarnaise or
Bordelaise sauce. Appetizers include chowders, crab cakes, calamari
and oysters on a half shell, to name a few.
For dessert, you may discover a killer chocolate cake drizzled with caramel, pecans
and whipped cream or cheesecake with strawberries. A variety of sweets not
listed on the menu will surprise and delight you as you top off the perfect
meal with something cool and sugary.
Our group's combined score of this restaurant's menu, service and
price averaged 9.5 out of 10. Not an unhappy soul in the group, all said
they would return on another visit to Roseville.
Paragon Steakhouse Restaurants, Inc.,
also owns Hungry Hunter, Mountain Jack's and Whaling Company in addition to
other restaurants. Carvers Steak & Chops is a fairly recent addition to the
family with only a few restaurants nationally as of this writing.
